An Exploration of the Indonesian Archipelago at PA.SO.LA Restaurant

Chef William Wongso collaborates with Chef Willmer Colmenares to present a two-day regional tasting experience at The Ritz-Carlton Jakarta, Pacific Place.

How well do you really know Indonesian cuisine? Beyond the familiar favourites lies an archipelago of recipes, techniques, and traditions that rarely travel beyond their place of origin. Every regional dish carries a story, shaped by generations of local knowledge, trade, and culture. Few people have dedicated as much of their lives to uncovering those stories as Chef William Wongso.

Long before regional cuisine became a global conversation, Chef William spent decades travelling across Indonesia’s thousands of islands, documenting recipes and learning directly from home cooks, spice merchants, and coastal fishermen. His research culminated in Flavors of Indonesia, a landmark publication celebrating not only the country’s diverse cuisine but also the communities that have preserved it for generations.

This August, that wealth of knowledge comes to the table at PA.SO.LA Restaurant in The Ritz-Carlton Jakarta, Pacific Place. On 1 and 2 August 2026, from 12-3pm, the hotel presents The Archipelago Table by William Wongso, an exclusive dining event created in collaboration with Executive Chef Willmer Colmenares and the hotel’s culinary team. The specially curated menu draws inspiration from regional traditions while presenting each dish with contemporary finesse.

Among the highlights is Tuna Gohu served in a crisp pani puri shell, a playful interpretation of North Maluku’s celebrated raw fish dish, where bright acidity and fresh seafood take centre stage. Rich Rendang Beef Cheek showcases the slow-building complexity of Indonesia’s most renowned spice blend, while Garang Asam Salmon delivers fragrant herbs and lively acidity in equal measure. The experience extends beyond the menu. Throughout the event, guests will have the opportunity to hear directly from Chef William, whose lifelong work has centred on preserving Indonesia’s culinary heritage and sharing the stories behind its regional cuisines.

“If you want to understand a culture, start with its food,” Chef William says. “Every region holds its own character and wisdom. Indonesia’s strength lies in this diversity, and I hope guests leave with a deeper curiosity about the traditions behind each bite.”

That sentiment is shared by Sumit Joshi, General Manager of The Ritz-Carlton Jakarta, Pacific Place, who sees the collaboration as an opportunity to introduce guests to the depth of Chef William’s knowledge through an intimate dining experience.

The event also supports a meaningful cause. A portion of the proceeds will benefit the Marriott Business Council Indonesia Charity Classic Golf Tournament on 22 August 2026 at Jatinangor National Golf & Resort. Funds raised will help build clean water facilities in East Nusa Tenggara, allowing every reservation to contribute to a lasting community initiative.
