Mexican Sunday Brunch at UNIQUE Rooftop Bar & Restaurant, RIMBA Jimbaran BALI by AYANA

Appetizer selection with strawberry margarita

The bright and colourful UNIQUE Rooftop Bar & Restaurant has its culinary focus fixed firmly on Mexico to add something different to Sundays on the Island of the Gods. The live music is Latino, the pool is inviting, there are free-flow magical margaritas and food that is as bright and colourful as the decor.

Dessert selection

Oozing with freshness and plenty of kick from the chillies, diners can choose as many of the appetizers as they like. Orders fly in for the guacamole, sour cream and chipotle cheese plate, while the tiradito de hauchinango – finely sliced red snapper and guava with jalapeno oil and anticucho sauce, and the pambazo – a kind of thick savoury pancake stuffed with spicy guajillo sauce, chorizo potato and sour cream topped with cheese and lettuce – come in a close second in popularity.

Vuelve a la vida

Choose one of the hearty main courses, which include pork, chicken, fish and beef dishes like the Huevos rancheros y chuleta, a tasty dish of refried beans topped with chunks of fork-tender pork and spicy red arbol sauce with a fried egg on top; Barbacoa short ribs with Mexican rice, green salsa and calabacita salad; Lengua en salsa chipotle – beef tongue, chickpeas and chipotle sauce; and Enchiladas mineras – spicy chicken with cheese enchilada and red chilli sauce.

If you still have room, then feel free to pick and mix from the dessert selection to your heart’s content – we especially liked the cream cheese caramel with eggnog tequila sauce and the rice pudding with shredded coconut and fruit compote.

Tampiquena con Chilaquiles

Guests can add a drinks package of free flow red and white wine, as well as frozen margaritas. The Mexican Sunday Brunch runs from 11AM to 3PM and is a casual, relaxed way to spend time listening to good music, gazing out across the treetops and indulging in great food and drink with friends or family.

There are bountiful brunch options in Bali, but the UNIQUE brigade were eager to produce a menu that would really lighten up someone’s Sunday, and what could be better than authentic Mexican served alongside a treetop skyline! The food is impactful, using only top-drawer ingredients with influential styles of cooking. Naturally, we have paired our Mexican Sunday Brunch with fruity margaritas or wine, and we invite all guests to make the most of their Sunday by enjoying UNIQUE’s designer rooftop pool.
