New Dining Experiences at Mozaic Gastronomic Bali

pioneer of fine dining in Ubud that has been standing strong for more than 20 years, Mozaic Gastronomic Bali is returning to the culinary scene with a new concept. After spending a year in solitude, Chef Chris Salans, along with now-Head Chef Blake Thornley, decided to re-open Mozaic with multi-concept dining.

Further cementing itself as the island’s premier dining destination, Mozaic Gastronomic Bali now offers three dining experiences under one roof. Diners are treated to a multi-sensory journey once they step into the restaurant. Welcome canapés and refreshing cocktails are served at the newly renovated The Tasting Rooms, followed by dinner in the air-conditioned The Dining Room, and last but not least, the main course can now be enjoyed in the Open Fire kitchen situated in the tropical garden of the restaurant.

Famed for marrying local ingredients with refined international preparation and artful presentation to satisfy both the eye and tantalise the taste buds with flavours that dazzle, Mozaic helped to establish the island as a leading Asian culinary destination. With Chef Blake at the helm, he and the culinary team are working closely with local suppliers and producers to source and cultivate the best ingredients, as well as aligning more sustainable elements to the restaurant’s offering, such as natural wines and zero-waste dishes.

“The idea of multi-offerings is a perfect match to current and upcoming trends. People nowadays are so used to being continuously stimulated that offering guests a variety of experiences within one space is defining the upcoming trend in F&B hospitality,” said Chef Blake, who spent six years working at Mozaic Bali with Chef Chris over a decade ago.
