Spice by Blake expands its repertoire with a special collaboration with Maukar Wooden House’s Nasi Babi Payangan, dishing up the vibrant and characterful flavours of Manado cuisine.
One of the hallmarks of Spice by Blake is its deep-rootedness in local culture, building every essence of its dining experience around the richness of Indonesian cuisine. So, it’s only natural that it continues to highlight different regional flavours from the archipelago. This time around, on 25 April 2026, the restaurant partnered with Nasi Babi Payangan to spotlight the robust palate of Manado cuisine with a one-night-only collaborative menu.
“This collaboration is about bold flavour and energy,” shared Head Chef Blake Thornley. “The cuisine we’re showcasing is vibrant, spicy, and full of character. It’s the kind of food that immediately wakes up your palate.”
True to the Spice by Blake philosophy, this collaboration reinterprets familiar dishes while retaining reverence for the roots of the food. The kitchen team does this by utilising the building blocks that make Manado cuisine so distinctive: aromatic spices, warm piquancy, generous use of herbs and chillies, and a fiery, smoky perfume that tantalises more than just the taste buds.
