KALIH by SIKI, however, offers a different scene, one that is more understated. Billed as a Cocktail Lab and Research & Development Room, this experimental space draws from SIKI’s proclivity for blending Japanese and Balinese influences, demonstrated through its lineup of star spirits that focuses on arak for its debut, with a second chapter highlighting sake on the horizon.
The Cocktail Lab Experience guides guests through KALIH’s whimsies. In lieu of a menu, the drinking experience here begins with a conversation. Upon revelation of one’s mood, preferred spirit, and palate, the mixologists concoct a bespoke cocktail using house infusions, experimental distillations, and techniques, promising a journey that feels personal and intimate.
With only 16 seats available, the ambience maintains an atmospheric quietude, allowing patrons to quickly pick up on the subtler details that shape the venue’s identity. It’s easy to see how KALIH studies, questions, and reinterprets mixology with all its experimentation and guest-centred exchange.
