I oversee every detail from the morning preparations right through to our final service of the evening. It is vital to ensure both the front-of-house and kitchen brigades align perfectly with our rigorous standards. Beyond operations, I focus heavily on cultivating a vibrant working environment. A motivated team naturally translates to impeccable guest satisfaction.

E: What makes a typical day?
A:
My mornings consistently begin with a comprehensive team briefing. We meticulously review the readiness of our dining areas alongside ingredient preparations to guarantee absolute perfection before opening the doors. Throughout the service hours, I remain actively present on the floor to guide our staff. I address any immediate challenges swiftly to maintain our high service benchmarks. Keeping the lines of communication open keeps the team energised. Ultimately, staff well-being is the absolute foundation of exceptional hospitality.

E: Who has been the most influential figure in your career?
A:
Our founder, Shoji Tsugawa, remains the most profound influence on my professional journey. He established Yakiniku Great in Japan over a quarter of a century ago. His unwavering commitment to presenting the finest Japanese Wagyu in its most optimal condition is truly inspiring. He possesses a genuine desire to bring immense joy to every diner. Witnessing his passion firsthand over the years has deeply shaped my own approach to this industry.

E: What are your strongest attributes?
A:
My greatest strength lies in forging meaningful connections. I naturally build strong rapport with both our esteemed guests and my dedicated colleagues. We live in an increasingly digital era. Yet, I firmly believe that genuine human care remains the absolute cornerstone of any memorable dining experience.

I find my greatest relaxation in travel. Exploring the distinctive local cuisine of different regions is a particular passion of mine. This pursuit serves as a wonderful escape while simultaneously providing fresh professional inspiration. It broadens my understanding of diverse service cultures while also deepening my appreciation for global culinary standards.

E: Dead or alive, who would you like to take out to dinner?
A:
Given the choice of absolutely anyone, I would undoubtedly choose my son. He is the most significant person in my life. The hospitality industry demands long hours. Therefore, simply sharing a meal with him holds immeasurable value for me.
