Raised in South Africa and born in the Philippines, Chef Sta Ana has had an incredible career filled with notable accomplishments, such as playing a key part in opening three Nobu locations worldwide. His expertise in contemporary Japanese cooking was further honed during his tenure with The Ritz-Carlton brand, where he pioneered a modern interpretation of Japanese gastronomy.

In his most recent position at Park Hyatt Hotel Doha, he successfully redefined and revitalised the hotel’s Japanese/Nikkei offerings, leading the restaurant to consecutive awards for the best Japanese dining experience. His commitment to excellence and his innovative approach have consistently set him apart in the competitive landscape of Japanese cuisine.
