The hotel’s mixologists present five distinctive variations that reimagine the timeless Italian aperitif. Each recipe explores bold botanical accents while honouring the original cocktail’s bittersweet foundation.
Indonesian culinary elements take centre stage across several creations. Sambal Matah delivers an adventurous savoury profile, pairing dry gin and Campari with clarified tomato water alongside fresh basil leaves. For patrons seeking a lighter serve, Menteng Rose presents a refined low-alcohol alternative. The drink lifts gin and vermouth through the lively, citrus-tinted fizz of local pohpohan carbonate.
Other recipes draw upon maritime influences and historical spice routes. Nigaironi introduces Japanese culinary nuance through dry gin infused with nori seaweed. Delicate chamomile vermouth balances this savoury touch, rounded out by drops of umami bitters. In contrast, the Aged Negroni showcases traditional wood maturation, resting seven days in an oak vessel to unite sweet vermouth with Banda spiced gin.
