The restaurant is the brainchild of Maurizio Bombini, an Italian chef who has worked his way around the globe, honing skills from renowned restaurants and establishing several prominent dining venues along his career, before deciding to settle down in Bali.
MAURI’s menu takes deep inspiration from Pugliese tradition, offering a contemporary dining experience with a touch of tradition where ingredients are handled with care to showcase their purest flavours. To enhance this purpose, the restaurant tries to use as many homemade items as possible, made from selected high quality local products in collaboration with the island’s local farmers.
