The Apurva Kempinski Bali has proudly appointed Andrea Astone as its new executive sous chef for the resort’s premier dining venue, Koral Restaurant.
Koral Restaurant is Bali’s first-ever aquarium restaurant, offering diners an underwater dining experience. Located within the grandness of The Apurva Kempinski Bali, chef Andrea is creating a spectacular culinary journey.
The Italian started his culinary career right after completing his formal studies in his homeland and, after gaining experience working in different kitchens, took the opportunity to work in a two Michelin-starred restaurant in Lyon, France. This was followed over the years with various stints at lavish restaurants, including Don Alfonso Italian Restaurant at La Mamounia in Marrakech and Don Alfonso in Sant Agata, Italy. Eager to discover new culinary destinations, he finally landed at Koral Restaurant to explore the rich tastes of the archipelago, elevating it with his European flair.
As a newcomer to Southeast Asia, chef Andrea has been taking a close look at Indonesian ingredients and familiarizing himself with the nation’s unique flavours so he can surprise diners with his amazing creations.
At Koral Restaurant, diners feast on elegant dishes inspired by Indonesian coastal flavours and crafted from local ingredients at a venue that is both casual and refined. Koral offers a full bistronomic experience, combining delectable dining, a laid-back ambience and the rarefied atmosphere of an aquarium, accompanied by a hypnotic soundtrack that captures the magic and mystery of life below the waves.
