
Long before culinary tourism became a global phenomenon, the secrets of Indonesian cuisine were passed down through traditional markets and rural kitchens. Chef William Wongso has long believed that the best way to understand a vast nation is by exploring what is served on its plates. His lifelong dedication to uncovering regional recipes established him as one of Indonesia’s most respected culinary figures. On 1-2 August 2026, he invited diners to experience the result of decades spent learning from traditional spice merchants and coastal fishermen.
Held at PA.SO.LA Restaurant within The Ritz-Carlton Jakarta, Pacific Place, The Archipelago Table by William Wongso celebrated Indonesia’s remarkable culinary diversity. In collaboration with Executive Chef Willmer Colmenares, Chef William presented a menu inspired by regional traditions. Among the highlights was Tuna Gohu in Pani Puri, a creative interpretation of the North Maluku specialty often referred to as Indonesian ceviche. It is served in a crisp panipuri shell that introduced an unexpected cultural fusion.

The menu also featured the richly flavoured Rendang Beef Cheek and the vibrant Garang Asam Salmon, with each dish reflecting the heritage and character of its place of origin. Throughout the event, Chef William shared insights into the stories behind the recipes, while General Manager Sumit Joshi welcomed guests to an experience that combined exceptional dining with meaningful conversation.
Beyond the table, the event supported a greater cause. A portion of the proceeds contributed to the Marriott Business Council Indonesia Charity Classic Golf Tournament, with funds allocated to the construction of clean water facilities in East Nusa Tenggara, allowing diners to support a meaningful initiative while celebrating Indonesia’s rich culinary heritage.
