In an era when Indonesian cuisine is finally getting the elevated recognition it deserves, Kaum is not just another restaurant jumping on the trendy bandwagon. In fact, Kaum was born out of more than three years of extensive research and a passionate drive to protect and bring back authenticity – not only of Indonesian cuisine, but also of history and culture.

Living up to its name, which means clan or tribe in Indonesian, Kaum is built upon the relationships made by the culinary collective behind the restaurant with numerous ethnic tribes in Indonesia. The steps towards Kaum included researching authentic flavours and quality ingredients before collaborating with small-scale and responsible food producers, all to bring almost-extinct cooking techniques and forgotten recipes back to life.

The menu comprises curated Indonesian dishes from across the islands of Sumatra, Java, Kalimantan, Bali, Sulawesi and Maluku, and diners can be sure that the fare is prepared and served as it’s supposed to be. The restaurant’s three customised grills allow bamboo grilling on lava stones, pit roasting and skewer grilling, and the sambal is manually ground with traditional mortar and pestle. Speaking of which, no Indonesian dining experience would be complete without sambal, and Kaum has six different kinds.

Choosing from the eclectic menu can be difficult, but fret not as Kaum offers three set menus – East Indonesia, Java and Bali, and all through Indonesia – to make deciding easier. Furthermore, Kaum also offers Kaum Collection Cocktails, incorporating indigenous exotic fruits, roots, herbs, flowers and spices and resulting in refreshingly creative cocktails.

Even the dining room of Kaum reflects Indonesia’s rich and vibrant culture. At first glance, Kaum looks stylishly rustic, but look closer and you’ll find Indonesia’s delicate craftsmanship in the charming details. The motifs of Torajan wood carvings can be found stamped on the concrete wall panels, and on the communal tables is bespoke ceramic tableware by local brand Gaya.
