During The Champagne Hours, a treat available every day of the week, the King Cole Bar presents, by request only, the dramatic sabrage ritual, in which the sommelier opens a bottle of Champagne with the sweeping flourish of a traditional Indonesian dagger known as a Kris. This rarely seen talent is taken very seriously at The St. Regis Bali Resort and features at its most prestigious events.
Of course, the bar team take drinks very seriously, crafting proper martinis, island-inspired cocktails shaken with fresh-squeezed juice, and, continuing the legacy of the original King Cole Bar in New York, a selection of Bloody Marys for guests’ sipping pleasure, including the resort’s very own Bali Mary, a spicy concoction of Absolut vodka peppar, jicama, cucumber, brown sugar, tomato juice, lemon and a secret mix of spices.

The resort’s head bartender is Balinese-born Ida Bagus Kartika Ariana, who has been with The St. Regis Bali Resort from the very beginning on the pre-opening team. He shares, “What I love the most about being a bartender is interacting with guests. At King Cole Bar, we always keep in mind that we need to provide excellent service and exceed guest expectations. I love to recommend the Bali Mary to our guests because of its composition; it is made of a popular Indonesian fruit salad called rujak, which gives the cocktail a unique taste. It’s one of our signature cocktails and can be enjoyed at any time!”.
