E: What are your responsibilities?
A: As Bar Director at Republic, I oversee all aspects of bar operations, with a primary focus on creating memorable guest experiences. I curate music programmes with DJs and live bands, organise guest bartender events and chef collaborations, and refine our beverage and food offerings to meet guest expectations. At the heart of my role is a commitment to personalised service. I foster a supportive environment for my team, empowering them to deliver exceptional hospitality. None of this would be possible without the talented Republic bar team and The Ritz-Carlton, Millenia Singapore, whose dedication ensures we consistently exceed guest expectations in every way.
E: What makes a typical day?
A: A typical day is anything but dull! I start with upbeat music to set the tone before heading to the hotel. My first priority is checking emails and addressing urgent matters before immersing myself in operations. Whether refining the beverage programme, collaborating with my team or brainstorming new activations, the dynamic nature of my work keeps me energised.
E: Your best attributes?
A: Empathy and creativity. Empathy allows me to connect with guests and my team, ensuring a personalised and memorable experience. Creativity helps me push boundaries, curate unique beverage offerings and design engaging activations that keep Republic fresh and exciting.
E: Team player or team leader?
A: I prefer to be a team leader. Creativity plays a key role in this, allowing me to inspire my team with fresh ideas and innovative solutions. I foster a collaborative environment where each member contributes their talents, ensuring we work towards a common goal, delivering exceptional experiences at Republic.
E: Who has been the most influential figure in your career?
A: Finding a mentor is rare, but I was fortunate to meet Luca Baioni, one of the world’s greatest bartenders, who now owns Latteria in Adelaide. I met Luca years ago while working at Sneaky Tony’s in Australia, and his guidance fundamentally reshaped my approach to bartending. Other remarkable mentors include Ueno San from High Five Tokyo and Hayden Scott Lambert from Above Board Melbourne. Their influence has shaped me not just as a bartender but as a person.
E: What sets your bar’s beverage offerings apart?
A: Our upcoming new menu blends innovation with timeless classics, creating unique personalised experiences. We combine creative concepts with the finest ingredients, honouring tradition while introducing fresh twists. While I can’t reveal too much yet, expect something special—stay tuned!
E: How do you unwind?
A: Returning to my hometown, Rimini, Italy. It’s the only place on earth that makes me feel completely at ease and truly happy. The familiarity, the atmosphere and the connection to my roots help me recharge and find a sense of peace that’s hard to replicate anywhere else.
E: Dead or alive, who would you like to take out to dinner?
A: My mother. She’s the most important person in my life. I’d cherish the chance to share a meal and thank her for her love and support.
