The festive menu begins with an amuse bouche of smoked cheese and yoghurt pâté brisée with truffle duxelles in a petite choux. The opening bite is light, preparing guests for the courses that follow. The appetiser features croquette de cod, served with remoulade sauce and kadaiyf, combining crisp texture with a mild, balanced flavour.
The soup course highlights roasted cauliflower, accompanied by fried chickpeas and sourdough croutons. It is presented as a simple and filling transition before the main course. For the main dish, guests may choose between two options: the Wagyu Tenderloin MB7 is served with raisin demi-glace sauce, grilled polenta, watercress purée, and vegetables, offering a complete and hearty plate; or the alternative is red snapper with salmon roe beurre blanc, pommes purée, and broccolini, providing a lighter seafood option.
Dessert completes the menu with an apple cinnamon tarte, paired with apple compote, pastry cream, and vanilla gelato. The dish closes the meal with familiar flavours suited to the festive season.
