Ingredients

• 45ml gin

• 5 slices Japanese cucumber

• 20ml Chinese Spice syrup

• 20ml lemon juice

• Earl Grey foam

Preparation

• Muddle the cucumber in a mixing glass.

• Pour in all ingredients and shake well.

• Fine strain into a martini glass.

• Top with Earl Grey foam and garnish

  with a slice of the cucumber.
