Italian Chef Alessandro Molini can always be seen busily ensuring that every offering at Prego, The Westin Resort Nusa Dua, Bali meets his exacting standards. Prego is a popular choice every day, but especially on Sundays, when you are sure to find his smiling face revelling in the fun-filled Italian family buffet and children’s games.

Chef Alex hails from Montecrestese, Italy, where his grandfather was a butcher who crafted fine Italian salami and owned a bakery and his grandmother ran an osteria for 40 years. Growing up, he helped clean beans, harvest tomatoes for salsa and grapes to make wine to be sold in the osteria, developing a firm passion for food.

This passion has seen him not only busy in the kitchen but also training students with disabilities and behavioural problems for job placement in mainstream society. Prior to arriving in Bali, he worked in many exotic destinations and luxury resorts, including Bulgari Hotel Milan, and helped re-establish the Italian restaurant at Four Seasons Resort Nevis in the West Indies following a tropical cyclone.

Ravioli di Magro

My goal is to present Prego’s diners with very traditional, home-style cooking. Spinach and ricotta-filled ravioli is an evergreen dish, an absolute classic, one that every Italian nonna (grandmother) hand makes in her kitchen. It is also one of my absolute favorite raviolis, being light, hearty and comforting. It is not only a delicious vegetarian option but the first one all Italian’s think of for “di magro”, or meatless, meals.
