Located on the on the 29th and 30th floor of the One Peking Building, it is renowned for its spectacular views of Victoria Harbour. Marine blue hues surround the texture of the natural wood floor and plush, embossed leather seating is offset with warm yellows and antique brass tones. Clever tiering ensures that every table and diner have uninterrupted harbour views.

On top of the stunning setting, Aqua Tokyo also offers up a superlative dining experience. It is actually one of two dining operations in the complex – the other being the Italian restaurant Aqua Roma – and all guests are free to order from each restaurant’s menus. Collectively, Aqua Tokyo and Aqua Roma have been named among the city’s best restaurants by Hong Kong Tatler for the last nine years, and they were also once included on Condé Nast Traveller’s list of the “Hottest 100 Tables in the World.”

Aqua Tokyo calls the food on its menu “inventive traditional cuisine,” taking authentic Japanese culinary techniques with global ingredients and modern flair. Chef Iwahashi Tatsuya presents a spectacular array of sushi and sashimi prepared from carefully selected seafood delivered daily.

Some of the restaurant’s signature dishes include the mizuna, pot herb and mustard leaf salad with grilled bean curd skin and crispy bacon drizzled with a mirin, sake, soy, sesame oil and chilli dressing; lobster with french bean, sweet potato and shiitake mushroom; yasai kakiage tempura topped with pan seared teriyaki foie gras; baked black cod and Taraba crab with burdock and crab sauce; and stone grilled Wagyu beef sirloin and crispy garlic chips with three sauces.

After dinner, be sure to head upstairs to the complex’s glamorous bar and club – Aqua Spirit. This panoramic mezzanine is home to an extensive cocktail list and after-dinner beats mixed by Aquamusic – Aqua’s own team of internationally acclaimed resident DJs.
