Bonito Fish Bar: The Hottest New Dining Destination in Bali

Following the success of MAURI, Maurizio Bombini eagerly brought the flavours of their native Puglia with Bonito Fish Bar, a new concept with a more casual ambience serving fresh and cooked fish and seafood.

Situated in the heart of Umalas, Bonito sources 80 percent of its fish and seafood from sustainable catches in nearby oceans including Bali, Lombok, Flores and Timor. There are a variety of mouth-watering imaginative plates destined to change the seafood dining scene in Bali, including crudo, pan-seared, roasted, deep-fried, and more. Bonito, Bali’s first fish and seafood delicatessen, also supplies freshly cut fillets and shellfish in a chilled, enclosed counter display for guests to cook at home.

This one-of-a-kind restaurant is designed by Caroline Usher, owner of UBD, a premier design studio in hospitality based in Bali. Bonito features two floors of al fresco and indoor dining, as well as a take-out option. On the outdoor terrace, which is ideal for Aperitivo hour, the guests are accommodated on eco-crete fish scale tiles, a mixture of recycled plastic bottles and concrete produced by Della Santa Studios. Every square meter of the tiles is made out of 160 plastic bottles picked from the shore of Bali.

One of the signature dishes is Zuppa di Mare which consists of Manila clams, calamari, barramundi and cherry tomatoes or guests can savour the Seafood Platter, with a selection of raw and blanched items. Another must try is the Bonito Rosetta, an Italian sandwich made with a natural no-yeast bread fermentation, offered with a choice of tuna and stracciatella cheese, poached lobster or crispy octopus bites.
