We gather around dining tables to share our daily lives. Yet the ingredients we casually consume often hold histories far larger than our personal conversations. Sugar & Spice captures this shared human heritage through a new Saturday evening programme titled The Silk Road. The hotel restaurant officially departs from the standard buffet format to trace a culinary path across four historic regions.

The physical atmosphere takes hold the moment diners arrive. A warm oshibori carrying deep notes of wood sets the initial mood. Overhead, the musical score changes subtly to reflect different geographic borders as the night progresses. Diners are immediately grounded in the environment of ancient trade routes before a single plate is served.

The menu travels fluidly across four distinct historical empires. It begins in the bustling crossroads of Kashgar in Xinjiang. Here, the Royal Da Pan Ji brings bold regional spices to the forefront, paired closely with a mint-infused Pu-erh tea known as Silk Road Mint Smoke Tea. Moving toward Central Asia, a Vegetarian Silk Road Garden highlights the quiet complexity of Samarkand alongside a traditional clarified milk drink called Samarkand Nectar.

Further down the historical lines lies the Persian city of Tabriz. A Caravan Silk Fire Box arrives via a moving guéridon, releasing fragrant smoke over spiced grills to emulate an ancient trader’s chest. Diners cool their palates with Sharbat-e Sekanjabin, a historic Persian beverage balancing sharp vinegar with sweet honey. The route eventually anchors in Istanbul, where a dramatic tableside Bosphorus Seafood Experience allows guests to select freshly salt-crusted catches.

Interactive stations seamlessly bridge these distinct geographic regions across the main dining room. A carving atelier offers heavy, fire-grilled Tomahawk steaks while a lively skewer market fills the space with the familiar aroma of Yang Rou Chuan. The evening finally closes on quiet dessert notes of saffron and pomegranate. Ancient merchants spent entire lifetimes crossing these vast borders, but modern guests can now share that monumental exchange over a single dinner.
