Longtime Union Group barman Mirwansyah Bule is leading the way at Modernhaus. His passion for flora inspires the beverage menu, showcasing unique creations. One standout is The Celery, Bule’s take on a martini. It combines celery vodka, bergamot liqueur and a touch of MSG, all infused with celery oil to deliver a subtly grassy flavour with a savoury kick. The umami notes also shine in Tomato, Bule’s interpretation of the classic Bloody Mary.
