Leading this remarkable culinary journey is Chef Joan Achour, a French chef whose expertise has been refined at some of the finest restaurants in Europe and the Middle East. Her masterful touch enhances the restaurant’s Asian fusion menu, which celebrates a diverse array of flavours inspired by the culinary traditions of Bali, Thailand, Japan and Korea. The dining experience is designed for sharing, reflecting the Balinese tradition of communal feasting. It begins with light yet flavourful starters such as Jimbaran prawn salad or smoked pomelos in a shell, showcasing meticulous attention to detail.

Truffle Tenderloin

The main courses further elevate the dining experience, featuring both the bounty of the sea and the richness of premium cuts of meat. A highlight is the signature local sea bass, wrapped in banana leaves and infused with a fragrant blend of grated coconut, turmeric, mustard seed and lemongrass. The premium tomahawk and wagyu ribeye steaks, aged for at least 25 days, provide unparalleled tenderness and depth of flavour. Accompanying these exquisite dishes are an array of house-made sauces, including BBQ, chimichurri and truffle teriyaki, along with a curated selection of rare peppercorns sourced from across Asia.

No dining experience at AKASA is complete without a decadent dessert. The dessert menu artfully combines French techniques with local ingredients, featuring delights such as pandan crème brûlée with homemade kaya jam and the Manjari namelaka chocolate sphere. To complement the meal, an extensive wine collection is housed in an underground wine cellar, accessible via a sleek glass elevator, ensuring that every pairing is perfectly matched.
