Upon visiting Four Seasons Resort Bali at Sayan, any guest will be enchanted first and foremost by its design and how it was built among the breathtaking natural surroundings. The resort’s reception area is framed by a circular fish pond, seemingly floating above the verdant treetops of Ubud and is truly a sight to behold.

One storey below the lobby is the resort’s all-day dining Ayung Terrace. The restaurant mimics the circular shape of the building, boasting unobstructed views of the Ayung valley, bringing the outside in. Executive Sous Chef Wayan Sutariawan, better known as Suta, helms the dining establishment, bringing innovative twists to favourite Indonesian cuisine from all over the archipelago.

Choose from the à la carte menu, showcasing rich flavours and dishes such as Bebek Betutu, 12-hour slow-roasted whole duck with thousand spice paste; Kerang dan Abon, seared scallops with turmeric chilli sauce and chicken floss; and Lombok Lobster with thousand spices, morning glory and raw sambal. 

In addition to the à la carte menu, Ayung Terrace also highlights its Sattvic Soul Food menu. The Sattvic philosophy is derived from Ayurveda, promoting longevity, immunity and mental clarity through healthy diet, mindfulness and exercise. For the Sattvic menu, Chef Suta collaborates with the resort’s The Sacred River Spa team to create a wellness-oriented menu to complete the holistic experience guests expect from the resort. 

Lombok Lobster

Chef Suta creates most of the dishes from scratch, using sensible ingredients, including organically farmed fruits and vegetables, fresh and dried herbs, premium cheeses, local spices that can soothe the stomach, such as turmeric, ginger, cardamom and cumin, as well as whole grains, nuts and seeds. 

Chef Suta ensures that the Sattvic menu tastes as scrumptious as it is nutritious. Savour healthy delicacies like the Jamur Panggang, grilled king mushroom with rice crumble and tomato sambal; Nasi Campur with red rice, long beans, braised jackfruit, fern shoot, tofu, tomato, aubergine and crispy soybeans; and many other delightful treats.
